I love a good salad. Let me clarify what I mean by ‘salad’. Not the boring rabbit food of lettuce tomato and cucumber. No way, my salads include everything and anything from the fridge and store cupboard.
I’ll add blanched green beans, grated carrot, rocket, sugar snaps, roasted squash, spinach, spring onions, rice, beans, avocado, quinoa or bulgar wheat. I’ll also add chicken, egg, tuna, then some nuts, seeds and feta cheese.
Toppped with balsamic vinegar and extra virgin olive oil, it’s yummy, nutritious and filling.
But at this time of year those salads just don’t get made. I crave hot foods so our Riverfood veg box gets mostly made into wonderfully warming hot soups.
One of my favourites recently came from Waitrose. Squash and sweet potato is cooked with tomatoes and onion in stock, add quinoa, some chilli and cooked meat and it’s a hearty stew which can been batch frozen and brought out for a quick lunch.
And there’s nothing wrong with a good beef stew with veggies and rice for dinnner......Especially
when its made by Mr Sunshine and served with a heavy bold red wine!
